Wow 1st listener. Guys what an awesome podcast. So Much information and detail. It's still a massive debate in the article uk what equals the best flavoured meats, marbled grain finishes or grass/ pasture feed. I'm on the grass feed side but with the benefits of dry ageing
I will be going back and making all of my butcher team listen to all the podcasts at work
